Choc CHIP ‘Chickpea’ Cookies
Ingredients:
1 can chickpeas
1/2 cup peanut butter
1 tsp baking powder
2 tsp vanilla extract
1/4 cup maple syrup or honey (bit more if you want them sweeter)
1/4 cup dark chocolate chips/chunks (more or less as preferred)
*add pinch of salt if no salt in PB
Method:
Preheat the oven to 350 degrees.
Drain chickpeas into a sieve and rinse under cold water.
Pour out onto a teatowel and pat dry, this is essential otherwise the mixture will be too wet.
Add all ingredients except the chocolate chips into a high speed blender and blend starting slow to high. The mixture will be thick so if the motor gets "stuck," turn it off and then scrape down the sides. Add 1-3 tsp of water, at the most, and blend again.
Scoop the mixture out of the blender into a mixing bowl.
Add choc chips and stir just enough to mix through evenly.
Spray a baking pan or use parchment paper.
Scoop out dough with a small cookie scooper or small spoon as the dough will be super sticky. If you don't have a scooper, then use your slightly wet hands, grab about 1 tablespoon's worth and roll into a ball.
Place and bake in the oven for 12-15 minutes. Mid way through cooking if you want to, use the back of a fork to gently press into more of a cookie shape and return to oven. Keeping an eye on them the last few minutes so they don't burn.
Once started to brown and crisp up remove from oven and transfer to a wire cooling rack before eating!
BAKED OATS
Ingredients:
50g Oats
Handful of blueberries
1 ripe banana
30g raisins
100-125mls of Almond Milk
Baking powder (1-2 teaspoon)
Cinnamon (1-2 teaspoons)
Maple syrup or honey (optional) - 1-2tbsp
Walnuts or Seeds (optional)
Method:
Preheat the oven to around 200 or 180 fan
Place oats in a bowl, cover with almond milk and allow to go soft
Mash the banana
Chop any nuts if using
Once the oats have absorbed the milk - add in mashed banana, raisins baking powder, cinnamon, blueberries and any nuts/seeds/maple syrup if using
Pour into a baking dish
Cook for 20-30 minutes until golden
